Actually, not so. The elephant has big eyes, but it is not a predator. You must look, rather, to the eye placement.
1) Those with both eyes at the front is called binocular vision. Most, if not all of them, are predators, as they need both eyes to calculate the distance of the prey. (So, the animals you mentioned above, all have binocular vision, hence, predators!)
2) Those that have each eye (slightly off) the side, giving them a wider area of vision to "watch" on any incoming natural enemy. It is called peripheral vision (?), and almost all non-predators have them. A horse, for instance, or a parrot, have peripheral vision.
Also, take in mind that, for oriental people, the eyes are the windows to the soul, so, if an anime character is drawn intentionally with small eyes, it usually means they have something to hide, or inheritely (sp?) evil. The first example I can come up with is Vegeta (Dragon Ball Z), compared to Son Goku. This does not apply to characters drawn with slatted eyes, like Brock of Pocket Monster, nor to characters like Kerberos of Card Captor Sakura ("your eyes looks like two dots!", Sakura).

Come to think about it, if one of the cons is in San Diego, there is no guarantee Kumiko-san will miss it, as it is not that far. In fact, she might be there and nobody will even notice she was there! (unless you are specifically looking for a Japanese girl)
